HFI Pancakes

Start your day with a stack of fluffy, homemade pancakes that are completely HFI safe. Made with simple, fructose-free ingredients, these pancakes are just as delicious and satisfying as the traditional version but tailored to meet your dietary needs.
My HFI kiddies love mini pancakes as a special treat! We love having them for birthday breakfasts, afternoon tea and a dessert that can be taken to birthday parties. They are so versatile and easy to make!

Ingredients

  • 50 g butter
  • 300 ml milk
  • 2 eggs
  • 200 g plain flour
  • 1 tbsp baking powder

Toppings

  • Butter, cream cheese or homemade whipped cream

Instructions 

  • Melt butter in saucepan.
  • In a separate bowl mix milk, eggs, flour and baking powder – add melted butter and continue to mix.
  • To cook pancakes, heat 1tbs of butter in a frying pan over a medium heat. Pour a ladle of batter into frying pan and cook for 1 - 2 minutes or until bubbles appear on the surface. Turn pancake over and cook for a further minute.
  • Serve with either butter, cream cheese or homemade freshly whipped cream.
