Mac and Cheese

Rich, cheesy, and irresistibly creamy — mac and cheese is the kind of timeless comfort food that never goes out of style. This homemade version takes things up a notch with a smooth, cheesy sauce that clings to every bite of tender pasta. Whether you're feeding a crowd, serving up a kid-approved dinner, or just indulging in a little nostalgic goodness, this recipe is pure satisfaction in every forkful.

Ingredients

  • 250 g pasta spirals or shells
  • 30 g broccoli head with no stalk (optional)
  • 20 g butter
  • 250 g milk
  • 60 g cheddar cheese
  • 30 g parmesan cheese
  • salt and pepper to taste

Instructions 

  • Boil a large pot of water and cook pasta until mildly soft. After 5 minutes add the broccoli to the boiling water and pasta – ensure the stalk has been removed as much as possible.
  • Place all remaining ingredients in another pot and stir until all ingredients are mixed through and the sauce is a nice consistency. If the sauce is a little too runny you can add ½ tsp of corn flour to help thicken.
  • Drain and rinse pasta and return to the pot. Pour sauce over the pasta and gently stir through. Serve as a main meal or plate up as a side dish.
